  • Chicken breast(650 g)
  • Olive oil(2½ tbsp)
  • Garlic(3 cloves)
  • Lemon(1)
  • Dried Oregano(1¾ tsp)
  • Cumin(1¼ tsp)
  • Paprika(1¼ tsp)
  • Salt(2 tsp)
  • Black pepper(¾ tsp)
  • Steamed Rice(240 g)
  • Greek yogurt(250 g)
  • Cucumber(1)
  • Tomato(2)
  • Red Onion(1)
  • Black Olives(80 g)optional
  • Feta(120 g)
  • Flat Leaf Parsley(15 g)optional

Method

    Rinse {White rice} until the water runs mostly clear.

    Add rinsed {White rice}, {Water}, and {Salt} to a pot. Bring to a boil, cover, then reduce to low and cook until the rice is tender and the water is absorbed.

    While the rice cooks, cut {Chicken breast} into bite-size pieces. Finely grate {Garlic}. Season chicken with {Oregano}, {Cumin}, {Paprika}, {Black pepper}, and {Salt}.

    Make the sauce: stir {Greek yogurt} with the juice from {Lemon}, half the grated {Garlic}, and {Salt}.

    Chop {Cucumber} and {Tomato} into small chunks. Thinly slice {Red Onion}. Roughly chop {Fresh parsley}.

    Heat {Olive oil} in a large pan over medium-high heat. Cook the seasoned chicken in a single layer until browned and cooked through, stirring occasionally. Add the remaining grated {Garlic} in the last minute.

    Turn off the heat. Rest the rice, covered, for 5 minutes, then fluff. Build bowls with rice, chicken, {Cucumber}, {Tomato}, {Red Onion}, and {Olives}. Spoon over yogurt sauce, crumble {Feta}, and finish with {Fresh parsley} and a crack of {Black pepper}.
