  • Courgette(2)
  • Peas(150 g)
  • Parmesan(40 g)
  • Onion(1)
  • Olive oil(3 tbsp)
  • Salt(1 tsp)
  • Black pepper(½ tsp)
  • Arugula(60 g)
  • Lemon(1)

Method

    Thinly slice {Onion} and {Courgette}. Crack the {Eggs} into a bowl, then whisk with {Parmesan}, {Salt}, and {Black pepper}.

    Heat {Olive oil} in a large nonstick frying pan over medium heat. Cook the {Onion} and {Courgette} until softened and lightly golden, about 6 minutes. Stir in the {Peas} for the last minute.

    Pour in the egg mixture and gently shake the pan so the {Courgette}, {Onion}, and {Peas} are evenly intermingled. Cook over low heat until the edges are set and the center is almost set, 7 minutes.

    Slide the frittata under a hot grill just until the top is set and lightly golden, about 4 minutes.
