
Spicy Pork & Basil Stir-Fry
Sliced pork tenderloin gets a fast, hot sear, then gets tossed with a glossy, spicy-savoury sauce, crisp bell pepper, and lots of fresh basil. Serve it over jasmine rice so the sauce clings to every bite.

Ingredients
- 300 g Jasmine Rice
- 645 ml Water
- 650 g Pork tenderloin
- 10 g Cornstarch
- 30 ml Vegetable oil
- 200 g Bell pepper
- 4 clove Garlic
- 20 g Ginger
- 2 Fresh Chili
- 45 ml Soy sauce
- 30 ml Oyster Sauce
- 15 ml Fish sauce
- 12 g Brown sugar
- 15 ml Rice Vinegar
- 35 g Fresh basil
- 1 Lime(optional)

Cook the rice: rinse Jasmine Rice, then combine with 600ml Water in a pot. Bring to a boil, cover, and simmer gently until tender. Turn off heat and keep covered.

Prep stir-fry ingredients: slice Pork tenderloin into thin strips. Thinly slice Bell pepper. Finely chop Garlic, Ginger, and Bird Eye Chili. Tear Fresh basil leaves (keep a small handful for topping).

Mix the sauce in a bowl: Soy sauce, Oyster Sauce, Fish sauce, Brown sugar, Rice Vinegar, and 45ml Water. Stir until the sugar dissolves.

Coat the pork: toss sliced Pork tenderloin with Cornstarch and 5g Salt and 1g Black pepper until lightly dusted.

Stir-fry: heat 30ml Vegetable oil in a large wok or skillet over high heat. Add pork in a single layer and sear, tossing occasionally, until mostly cooked and lightly browned. Add Bell pepper and stir-fry until crisp-tender.

Finish: add Garlic, Ginger, and Bird Eye Chili and stir-fry briefly until fragrant. Pour in the sauce and toss hard until glossy and reduced enough to coat everything. Turn off heat, fold in Fresh basil, and squeeze over Lime (optional). Serve over rice and top with reserved basil.
