- Mushroom(300 g)
- Shiitake Mushroom(150 g)
- Olive oil(2 tbsp)
- Butter(1 tbsp)
- Garlic(2 cloves)
- Thyme(1 tsp)
- Salt(1 tsp)
- Black pepper(½ tsp)
- Ricotta(180 g)
- Creme Fraiche(60 ml)
- Parmesan(40 g)
- Mozzarella(200 g)
- Truffle paste(1 tbsp)
- Truffle oil(2 tsp)
- Flat Leaf Parsley(2 tbsp)optional

Preheat the oven to 240°C. Let the {Pizza dough} sit at room temperature while you prepare the toppings.

Slice the {Mushroom} and {Shiitake Mushroom}. Finely chop the {Garlic}. In a bowl, mix the {Ricotta}, {Crème Fraîche}, half the {Parmesan}, the {Truffle paste}, a pinch of the {Salt}, and a few grinds of the {Black pepper}.

Heat the {Olive oil} and {Butter} in a large pan over medium-high heat. Add the {Mushroom}, {Shiitake Mushroom}, {Garlic}, {Thyme}, remaining {Salt}, and remaining {Black pepper}. Cook until the mushrooms release their moisture and turn golden-brown.

Stretch the {Pizza dough} into a large round on a lined tray or pizza pan. Spread over the ricotta mixture, leaving a small border. Scatter the {Mozzarella}, spoon over the mushrooms, and finish with the remaining {Parmesan}.
