  • Ground turkey(500 g)
  • Spaghetti(320 g)
  • Olive oil(1 tbsp)
  • Onion(1)
  • Carrot(1)
  • Garlic(3 cloves)
  • Tomato paste(2 tbsp)
  • Canned tomatoes(800 g)
  • Dried Oregano(1 tsp)
  • Stock cube(1)
  • Salt(1½ tsp)
  • Black pepper(½ tsp)
  • Parmesan(40 g)
  • Fresh basil(10 g)optional

Method

    Finely chop {Onion} and {Carrot}, and mince {Garlic}. Grate {Parmesan}.

    Heat {Olive oil} in a large deep pan over medium heat. Add {Onion} and {Carrot} and cook until softened, about 5 minutes. Stir in {Garlic} for 1 minute.

    Add {Turkey Mince}, {Salt}, and {Black pepper}. Break up the meat and cook until no pink remains, about 6 minutes. Stir in {Tomato paste} and cook for 1 minute more.

    Pour in {Canned tomatoes}, crumble in {Stock cube}, and add {Dried Oregano}. Add 200ml water, bring to a gentle bubble, then simmer until thickened, stirring now and then, for 15 minutes.

    Meanwhile, cook {Spaghetti} in a large pot of salted water until al dente, about 10 minutes. Reserve a mug of pasta water, then drain.

    Add the drained {Spaghetti} to the sauce with a splash of reserved pasta water and half the {Parmesan}. Toss until the pasta is evenly coated and glossy. Serve with the remaining {Parmesan} and scatter over {Fresh basil} if using.
