
Beef Kofta & Hummus Couscous

- Beef Mince(600 g)
- Onion(1)
- Garlic(3 cloves)
- Flat Leaf Parsley(20 g)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Cinnamon(½ tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Olive oil(2 tbsp)
- Couscous(240 g)
- Stock cube(1)
- Lemon(1)
- Hummus(240 g)
- Cucumber(1)
- Tomato(2)
- Fresh mint(10 g)optional
- Greek yogurt(120 g)optional

Finely grate half of the {Onion}, mince the {Garlic}, and finely chop the {Fresh parsley}. Dice the remaining {Onion}, {Cucumber}, and {Tomato}. Pick and chop the {Fresh mint}. Cut the {Lemon} into halves.

In a bowl, mix the {Ground beef}, grated half of the {Onion}, half the {Garlic}, most of the {Fresh parsley}, {Cumin}, {Paprika}, {Cinnamon}, {Salt}, and {Black pepper}. Roll into 16 small meatballs.

Put the {Couscous} in a heatproof bowl with the {Stock cube}. Pour in 300ml boiling water, cover, and leave for 5 minutes. Fluff with a fork, then mix in 1 tbsp of the {Olive oil} and a squeeze of the {Lemon}.

Heat the remaining 1 tbsp of {Olive oil} in a large frying pan over medium-high heat. Add the meatballs and cook for 10 minutes, turning every few minutes, until golden-brown and cooked through.

Add the diced remaining half of the {Onion} and the rest of the {Garlic} to the pan. Cook for 2 minutes until softened and fragrant, then squeeze in the remaining {Lemon} juice.

Spread the {Hummus} onto shallow bowls. Spoon over the couscous, scatter with the {Cucumber}, {Tomato}, remaining {Fresh parsley}, and {Fresh mint}, then add the kofta meatballs. Dollop with the {Greek yogurt} if using, and serve.
