  • Macaroni(320 g)
  • Butter(45 g)
  • All-Purpose Flour(3 tbsp)
  • Milk(700 ml)
  • Cheddar cheese(250 g)
  • Parmesan(50 g)
  • Garlic powder(1 tsp)
  • Mustard(1 tsp)
  • Nutmeg(¼ tsp)
  • Salt(1½ tsp)
  • Black pepper(½ tsp)
  • Breadcrumbs(60 g)
  • Olive oil(1 tbsp)

    Preheat the oven to 200°C. Grate the {Cheddar cheese} and {Parmesan}.

    Bring a large pot of water to the boil. Salt it well, then cook the {Macaroni} for 2 minutes less than the pack says. Drain.

    Meanwhile, melt the {Butter} in a saucepan over medium heat. Stir in the {All-Purpose Flour} and cook for 1 minute, then gradually whisk in the {Milk} until smooth. Add the {Garlic powder}, {Mustard}, {Nutmeg}, {Salt}, and {Black pepper}. Cook until the sauce thickens enough to coat a spoon, about 4 minutes.

    Take the pan off the heat and stir in most of the {Cheddar cheese} and half the {Parmesan} until melted, saving a small handful of cheddar for the top. Fold in the drained {Macaroni} until every piece is coated.

    Tip the mac and cheese into a baking dish. Mix the {Breadcrumbs}, remaining {Parmesan}, reserved {Cheddar cheese}, and {Olive oil}, then scatter over the top.
