  • Penne(300 g)
  • Olive oil(1 tbsp)
  • Butter(1 tbsp)
  • Onion(1)
  • Garlic(4 cloves)
  • Sun-dried tomatoes(90 g)
  • Tomato paste(1 tbsp)
  • Chicken Broth(180 ml)
  • Heavy cream(250 ml)
  • Parmesan(80 g)
  • Spinach(120 g)
  • Dried Oregano(1 tsp)
  • Chili flakes(½ tsp)
  • Salt(1 tsp)
  • Black pepper(½ tsp)
  • Fresh basil(10 g)optional

Method

    Bring a large pot of well-salted water to the boil. Meanwhile, cut {Chicken breast} into bite-size pieces, finely chop {Onion}, mince {Garlic}, roughly chop {Sun-dried tomatoes}, and grate {Parmesan}.

    Cook {Penne} in the boiling water until just al dente. Reserve 240ml pasta water, then drain.

    While the pasta cooks, heat {Olive oil} and {Butter} in a large skillet over medium-high heat. Add {Chicken breast}, {Salt}, and {Black pepper}, and cook until lightly golden and nearly cooked through. Add {Onion} and cook until softened, then stir in {Garlic}, {Sun-dried tomatoes}, {Tomato paste}, {Oregano}, and {Chili flakes} for 1 minute.

    Pour in {Chicken Stock} and scrape up any browned bits. Stir in {Heavy cream} and simmer until slightly thickened.
