
Pesto Chicken & Gnocchi

Ingredients
- Chicken breast(600 g)
- Gnocchi(500 g)
- Pesto(4 tbsp)
- Heavy cream(120 ml)
- Baby Spinach(120 g)
- Parmesan(50 g)
- Garlic(2 cloves)
- Olive oil(1 tbsp)
- Lemon(1)
- Salt(1 tsp)
- Black pepper(½ tsp)
Method

Slice the {Chicken breast} into bite-size pieces. Finely chop the {Garlic}, grate the {Parmesan}, and zest half the {Lemon}.

Heat the {Olive oil} in a large frying pan over medium-high heat. Add the chicken with {Salt} and {Black pepper}, then cook until lightly golden and just cooked through.

Add the {Garlic} and {Gnocchi}. Cook, stirring often, until the gnocchi are hot and starting to turn golden in spots.

Lower the heat and stir in the {Pesto}, {Heavy cream}, and {Baby Spinach}. Cook until the spinach wilts and the sauce thickens enough to coat the gnocchi and chicken.

Take off the heat and toss through the {Parmesan}, lemon zest, and a squeeze of juice from the {Lemon}.
