  • Chicken breast(700 g)
  • Butter(240 ml)
  • Hot sauce(2 tbsp)
  • Salt(2 tsp)
  • Black pepper(1½ tsp)
  • Garlic powder(2 tsp)
  • Paprika(2 tsp)
  • All-Purpose Flour(440 g)
  • Cornflour(60 g)
  • Baking Powder(1 tsp)
  • White sugar(1 tbsp)
  • Milk(300 ml)
  • Eggs(2)
  • Rapeseed Oil(500 ml)
  • Honey(120 ml)
  • Chili flakes(1 tsp)
  • Arugula(80 g)
  • Lemon(1)
  • Olive oil(1 tbsp)

Method

    Slice the {Chicken breast} horizontally into 4 thin cutlets. In a bowl, whisk the {Butter}, {Hot sauce}, 1 tsp of the {Salt}, 1 tsp of the {Garlic powder}, 1 tsp of the {Paprika}, and 1 tsp of the {Black pepper}. Add the chicken and coat well.

    Let the chicken marinate for 20 minutes while you make the waffle batter and salad.

    Whisk the {Flour}, {Baking Powder}, {White sugar}, remaining 1 tsp {Salt}, remaining 1 tsp {Garlic powder}, remaining 1 tsp {Paprika}, and remaining 1/2 tsp {Black pepper} in a bowl. In a second bowl, whisk the {Milk}, {Eggs}, and 60g of the melted {Butter}. Stir the wet mixture into the dry mixture just until combined. In another bowl, toss the {Arugula} with the juice of the {Lemon} and the {Olive oil}.

    Heat the {Honey} with the {Chili flakes} in a small pan for 2 minutes until loose and glossy, then set aside. In a shallow dish, mix the {All-Purpose Flour} and {Cornstarch}. Lift the chicken from the marinade, dredge well in the flour mixture, and press to create craggy edges.

    Heat the {Vegetable oil} in a deep heavy pan to 175C. Fry the chicken in batches for 4 to 5 minutes per side until golden and crisp and the internal temperature reaches 74C. Transfer to a rack and keep warm.

    Cook the waffles in a hot waffle iron using the batter, brushing with the remaining 20g {Butter} as needed, until deeply golden and crisp at the edges, about 4 minutes per batch.

    Serve each plate with waffles, a fried chicken cutlet on top, warm hot honey spooned over, and the dressed arugula alongside.
