Ingredients
- Chicken breast(600 g)
- Olive oil(2 tbsp)
- Lime(2)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Garlic powder(1 tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Steamed Rice(250 g)
- Chicken Broth(500 ml)
- Avocado(2)
- Tomato(2)
- Cucumber(1)
- Coriander(15 g)

Slice the {Chicken breast} into bite-size strips. Zest and juice 1 of the {Lime}, then toss with the chicken, {Olive oil}, {Cumin}, {Paprika}, {Garlic powder}, {Salt}, and {Black pepper}. Dice the {Tomato}, chop the {Cucumber}, slice the {Avocado}, and roughly chop the {Fresh cilantro}. Cut the remaining {Lime} into wedges.

Add the {White rice} and {Chicken Broth} to a saucepan. Bring to a boil, cover, and cook until the rice is tender and the liquid is absorbed.

While the rice cooks, heat a large pan over medium-high heat. Cook the chicken for 6 minutes, stirring occasionally, until lightly golden and cooked through.

Fluff the rice and divide it between bowls. Top with the cooked chicken, {Tomato}, {Cucumber}, and {Avocado}. Scatter over the {Fresh cilantro} and serve with the {Lime} wedges for squeezing.
