
Turkey Bolognese Bake

- Olive oil(1 tbsp)
- Onion(1)
- Carrot(1)
- Garlic(3 cloves)
- Ground turkey(500 g)
- Tomato paste(2 tbsp)
- Canned tomatoes(400 g)
- Tomato sauce(250 ml)
- Dried Oregano(1 tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Penne(250 g)
- Mozzarella(200 g)
- Parmesan(40 g)
- Fresh basil(10 g)optional

Preheat the oven to 220C. Finely chop the {Onion}, grate the {Carrot}, and mince the {Garlic}.

Heat the {Olive oil} in a large ovenproof skillet or saucepan over medium heat. Cook the {Onion} and {Carrot} for 5 minutes until softened, then stir in the {Garlic} for 1 minute.

Add the {Ground turkey} and cook, breaking it up well, until no pink remains. Stir in the {Tomato paste}, then add the {Canned tomatoes}, {Tomato sauce}, {Oregano}, {Salt}, and {Black pepper}. Simmer for 10 minutes until thick and rich.

Meanwhile, boil the {Penne} in well-salted water for 2 minutes less than package directions. Drain, then fold the pasta into the turkey sauce with half the {Mozzarella} and half the {Parmesan}.

Top with the remaining {Mozzarella} and {Parmesan}. Bake for 15 minutes until bubbling and golden on top.
