
Turkey Meatballs in Tomato Sauce

- Ground turkey(500 g)
- Breadcrumbs(60 g)
- Parmesan(80 g)
- Eggs(1)
- Garlic(6 cloves)
- Fresh parsley(4 tbsp)
- Salt(1 tsp)
- Black pepper(½ tsp)
- Olive oil(2 tbsp)
- Onion(1)
- Tomato paste(2 tbsp)
- Canned tomatoes(800 g)
- Oregano(1 tsp)
- Palm Sugar(1 tsp)
- Spaghetti(300 g)

Finely chop {Onion}, mince both lots of {Garlic}, and finely chop the {Fresh parsley}.

In a bowl, mix {Ground turkey}, {Breadcrumbs}, {Parmesan}, {Eggs}, half the {Garlic}, half the {Fresh parsley}, {Salt}, and {Black pepper}. Form into 16 small meatballs.

Heat {Olive oil} in a large deep pan over medium heat. Add the meatballs and cook until lightly golden on several sides, about 6 minutes. Transfer to a plate.

In the same pan, cook {Onion} for 4 minutes until softened. Stir in the remaining {Garlic}, {Tomato paste}, {Oregano}, and {Palm Sugar} for 1 minute. Add {Canned tomatoes} and bring to a gentle simmer.

Return the meatballs to the sauce. Cover and simmer for 12 minutes, stirring once or twice, until the meatballs are cooked through and the sauce is thickened.

Meanwhile, boil the {Spaghetti} in salted water according to the pack instructions until al dente. Reserve a mug of pasta water, then drain.

Add the drained spaghetti to the pan and toss with the sauce, loosening with a splash of reserved pasta water if needed. Serve topped with the remaining {Parmesan} and remaining {Fresh parsley}.
