- Aubergine(1)
- Courgette(1)
- Bell pepper(1)
- Red Onion(1)
- Tomato sauce(160 ml)
- Mozzarella(180 g)
- Feta(100 g)
- Black Olives(80 g)
- Olive oil(2 tbsp)
- Dried Oregano(2 tsp)
- Garlic(2 cloves)
- Salt(1 tsp)
- Black pepper(½ tsp)
- Fresh basil(10 g)optional

Preheat the oven to 240°C. Thinly slice the {Eggplant}, {Zucchini}, {Bell pepper}, and {Red Onion}. Finely grate or mince the {Garlic}.

Toss the {Eggplant}, {Zucchini}, {Bell pepper}, and {Red Onion} with {Olive oil}, {Oregano}, {Dried Oregano}, {Salt}, and {Black pepper}. Spread on a tray and roast until tender and lightly golden.
