  • Italian Sausage(500 g)
  • Onion(2)
  • Rapeseed Oil(2 tbsp)
  • Eggs(3)
  • Milk(200 ml)
  • All-Purpose Flour(120 g)
  • Salt(½ tsp)
  • Black pepper(¼ tsp)
  • Beef Broth(300 ml)
  • Worcestershire sauce(1 tbsp)
  • Thyme(½ tsp)
  • Butter(1 tbsp)

Method

    Preheat the oven to 220°C. Slice the {Onion} into thin wedges.

    Add the {Vegetable oil} to a baking dish, then add the {Pork sausage} and {Onion}. Toss lightly and roast until the sausages are lightly golden and the onions are softened.

    Meanwhile, whisk the {Eggs}, {Milk}, {Flour}, {Salt}, and {Black pepper} into a smooth batter.

    Carefully pour the batter around and between the sausages and onions. Return to the oven and bake until puffed, golden, and set.

    While the bake finishes, melt the {Butter} in a small pan. Stir in the {Flour} and cook briefly, then whisk in the {Beef Stock}, {Worcestershire sauce}, and {Thyme}. Simmer until thickened into gravy.
