
Creamy Salmon & Dill Penne
Flaky salmon and tender penne are folded through a silky lemon-dill cream sauce with spinach and Parmesan for a fast, cozy pasta dinner that feels rich without being heavy.

Ingredients
- Salmon(500 g)
- Penne(320 g)
- Olive oil(1 tbsp)
- Butter(1 tbsp)
- Onion(1)
- Garlic(3 cloves)
- Spinach(120 g)
- Cream(250 ml)
- Parmesan(60 g)
- Fresh dill(15 g)
- Lemon(1)
- Salt(1 tsp)
- Black pepper(1 tsp)

Bring a large pot of well-salted water to the boil. Finely chop {Onion}, mince {Garlic}, roughly chop {Fresh dill}, zest and juice {Lemon}, and cut {Salmon} into irregular bite-size pieces. Grate {Parmesan}.

Cook {Penne} in the boiling water until just al dente, about 10 minutes. Reserve a mug of pasta water, then drain.

Meanwhile, heat {Olive oil} and {Butter} in a large skillet over medium heat. Add {Onion} with half the {Salt} and cook for 3 minutes until softened. Stir in {Garlic} and cook for 1 minute.

Add {Cream}, most of the {Parmesan}, the lemon zest, half the {Fresh dill}, and the remaining {Black pepper}. Simmer gently for 2 minutes until slightly thickened, then add {Salmon} and {Spinach}. Simmer for 4 minutes, stirring gently, until the salmon is just cooked and the spinach has wilted.

Add the drained {Penne} to the sauce with {Lemon} juice and a splash of reserved pasta water as needed. Toss for 1 minute until the sauce coats every piece of pasta and the salmon flakes into the penne. Taste and season with the remaining {Salt} if needed.
