  • Beef Mince(600 g)
  • Breadcrumbs(60 g)
  • Parmesan(40 g)
  • Eggs(1)
  • Garlic(3 cloves)
  • Flat Leaf Parsley(2 tbsp)
  • Salt(1 tsp)
  • Black pepper(½ tsp)
  • Olive oil(1 tbsp)
  • Onion(1)
  • Tomato paste(1 tbsp)
  • Tomato sauce(500 ml)
  • Dried Oregano(1 tsp)
  • Palm Sugar(1 tsp)
  • Mozzarella(200 g)
  • Bread(4)

Method

    Finely grate {Garlic}, finely chop {Fresh parsley}, and finely dice {Onion}. In a large bowl, combine {Ground beef}, {Breadcrumbs}, {Parmesan}, {Eggs}, half the {Garlic}, half the {Fresh parsley}, {Salt}, and {Black pepper}. Mix gently, then shape into 12 small meatballs.

    Heat {Olive oil} in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned all over, about 8 minutes. Transfer to a plate.

    In the same skillet, cook the {Onion} for 3 minutes until softened. Stir in the remaining {Garlic}, then add {Tomato paste}, {Tomato sauce}, {Oregano}, and {Palm Sugar}. Bring to a gentle bubble.

    Return the meatballs to the sauce, spooning the sauce over them. Cover and simmer for 12 minutes until cooked through and the sauce is thickened.

    Split the {Sub Rolls} and fill each with 3 meatballs and plenty of sauce. Top with {Mozzarella}, then place under a hot grill for 2–3 minutes until melted. Finish with the remaining {Fresh parsley} and serve hot.
