  • Orzo(250 g)
  • Sun-dried tomatoes(90 g)
  • Onion(1)
  • Garlic(4 cloves)
  • Baby Spinach(100 g)
  • Heavy cream(250 ml)
  • Vegetable Broth(700 ml)
  • Parmesan(50 g)
  • Tomato paste(1 tbsp)
  • Olive oil(1 tbsp)
  • Butter(1 tbsp)
  • Dried Oregano(1 tsp)
  • Chili flakes(½ tsp)
  • Salt(½ tsp)
  • Black pepper(½ tsp)
  • Fresh basil(10 g)optional

Method

    Dice {Onion}, finely chop {Garlic}, and roughly chop {Sun-dried tomatoes}. Cut {Halloumi} into bite-size pieces and grate {Parmesan}.

    Heat {Olive oil} and {Butter} in a deep sauté pan over medium heat. Add {Halloumi} and cook until golden on several sides, 4 minutes. Scoop out onto a plate.

    In the same pan, add {Onion} and cook until softened, 5 minutes. Stir in {Garlic}, {Sun-dried tomatoes}, {Tomato paste}, {Oregano}, {Chili flakes}, {Salt}, and {Black pepper} for 1 minute.

    Stir in {Orzo}, then pour in {Vegetable Stock} and {Heavy cream}. Bring to a gentle bubble and simmer, stirring often, until the orzo is tender and the sauce is thick and creamy, 14 minutes.

    Fold the cooked {Halloumi}, {Baby Spinach}, and {Parmesan} into the orzo. Cook for 3 minutes, stirring, until the spinach wilts and the sauce clings thickly to the pasta.
