Ingredients

Servings:2
  • Tuna(300 g)
  • Eggs(2)
  • Potato(300 g)
  • Green beans(200 g)
  • Lettuce(120 g)
  • Cherry Tomatoes(200 g)
  • Black Olives(80 g)
  • Olive oil(3 tbsp)
  • Dijon Mustard(1 tbsp)
  • Lemon(1)
  • Vinegar(1 tbsp)
  • Salt(1 tsp)
  • Black pepper(½ tsp)

Method

  1. 1

Bring a saucepan of water to the boil. Add {Eggs} and cook for 7 minutes for jammy centers. Lift out and cool under cold water. In the same pan, add the {Potato} and boil for 10 minutes until tender.

    ~10 min

  2. 2

    While the potatoes cook, trim the {Green beans}, tear the {Lettuce}, halve the {Cherry Tomatoes}, peel the eggs, and whisk together {Olive oil}, {Dijon Mustard}, the juice of {Lemon}, {Vinegar}, {Salt}, and {Black pepper}.

    ~10 min

  3. 3

Add the {Green beans} to the boiling potatoes for the last 3 minutes, then drain everything well. Toss the warm {Potato} and {Green beans} with a spoonful of dressing so they soak up the flavor.

    ~3 min

  4. 4

Heat a frying pan with {Olive oil}. Season the {Tuna} with a little extra salt and pepper, then sear for 1 to 2 minutes per side so the outside is lightly golden and the center stays rosy.

    ~4 min

  5. 5

Arrange the {Lettuce}, dressed {Potato}, {Green beans}, {Cherry Tomatoes}, {Kalamata Olives}, and halved eggs on plates. Slice the {Tuna} and lay it over the salad, then spoon over the remaining dressing and serve.

    ~3 min
