
Niçoise Tuna Salad
Seared tuna steak crowns a bright salad of tender potatoes, green beans, tomatoes, olives, lettuce, and jammy eggs, all finished with a sharp Dijon-lemon dressing for a light but satisfying French-style dinner.

- Tuna(300 g)
- Eggs(2)
- Potato(300 g)
- Green beans(200 g)
- Lettuce(120 g)
- Cherry Tomatoes(200 g)
- Black Olives(80 g)
- Olive oil(3 tbsp)
- Dijon Mustard(1 tbsp)
- Lemon(1)
- Vinegar(1 tbsp)
- Salt(1 tsp)
- Black pepper(½ tsp)

Bring a saucepan of water to the boil. Add {Eggs} and cook for 7 minutes for jammy centers. Lift out and cool under cold water. In the same pan, add the {Potato} and boil for 10 minutes until tender.

While the potatoes cook, trim the {Green beans}, tear the {Lettuce}, halve the {Cherry Tomatoes}, peel the eggs, and whisk together {Olive oil}, {Dijon Mustard}, the juice of {Lemon}, {Vinegar}, {Salt}, and {Black pepper}.

Add the {Green beans} to the boiling potatoes for the last 3 minutes, then drain everything well. Toss the warm {Potato} and {Green beans} with a spoonful of dressing so they soak up the flavor.

Heat a frying pan with {Olive oil}. Season the {Tuna} with a little extra salt and pepper, then sear for 1 to 2 minutes per side so the outside is lightly golden and the center stays rosy.
