- Ground lamb(600 g)
- Onion(1)
- Garlic(3 cloves)
- Flat Leaf Parsley(15 g)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Cinnamon(½ tsp)
- Salt(1½ tsp)
- Black pepper(1 tsp)
- Olive oil(2 tbsp)
- Couscous(240 g)
- Vegetable Broth(300 ml)
- Lemon(1)
- Fresh mint(10 g)
- Cucumber(1)
- Greek yogurt(180 g)

Finely grate half of the {Onion}, mince the {Garlic}, chop the {Fresh parsley}, finely chop the {Fresh mint}, dice the {Cucumber}, and zest then juice the {Lemon}.

In a bowl, mix the {Ground lamb} with the grated onion, half the {Garlic}, most of the {Fresh parsley}, {Cumin}, {Paprika}, {Cinnamon}, {Salt}, and {Black pepper}. Shape into 8 long kofta around damp hands or skewers if using.

Heat {Olive oil} in a large pan over medium-high heat. Cook the kofta for 8 minutes, turning every couple of minutes, until golden-brown and cooked through.

Meanwhile, put the {Couscous} in a heatproof bowl. Bring the {Vegetable Stock} to a boil with the remaining garlic, then pour it over the couscous, cover, and leave for 5 minutes.

Fluff the couscous with a fork, then stir in half the lemon juice, the lemon zest, and the remaining herbs. In a small bowl, mix the {Greek yogurt} with the rest of the lemon juice.

Spoon the herby couscous onto plates, top with the kofta, and serve with the diced cucumber and lemony yogurt alongside.
