- Ground lamb(600 g)
- Red Onion(1)
- Garlic(3 cloves)
- Olive oil(1 tbsp)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Cinnamon(½ tsp)
- Salt(1¼ tsp)
- Black pepper(½ tsp)
- Tomato paste(1 tbsp)
- Lemon(1)
- Greek yogurt(200 g)
- Fresh mint(2 tbsp)
- Cucumber(1)
- Tomato(2)
- Lettuce(120 g)
- Flat Leaf Parsley(2 tbsp)
- Flatbread(4)
Method

Finely chop {Red Onion} and mince {Garlic}. Dice {Cucumber} and {Tomato}, shred {Lettuce}, and finely chop {Fresh parsley} and {Fresh mint}. Cut the {Lemon} in half.

In a bowl, mix {Greek yogurt}, half the chopped {Fresh mint}, a squeeze of {Lemon}, a pinch of {Salt}, and a little {Black pepper}. In a second bowl, toss {Cucumber}, {Tomato}, {Lettuce}, half the chopped {Fresh parsley}, and another squeeze of {Lemon}.

Heat {Olive oil} in a large pan over medium-high heat. Add {Red Onion} and cook for 4 minutes until softened. Stir in {Garlic}, {Cumin}, {Paprika}, and {Cinnamon} for 1 minute until fragrant.

Add {Ground lamb}, {Tomato paste}, the remaining {Salt}, and the remaining {Black pepper}. Break the lamb into small pieces and cook for 8–10 minutes, stirring often, until browned and glossy. Squeeze in the remaining {Lemon} juice and stir through the remaining {Fresh parsley}.

Warm the {Flatbread} in a dry pan or low oven for 2 minutes so they soften and become pliable.
