- Ground lamb(600 g)
- Onion(1)
- Garlic(3 cloves)
- Spinach(200 g)
- Olive oil(1 tbsp)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Cinnamon(½ tsp)
- Salt(1 tsp)
- Black pepper(½ tsp)
- Flatbread(4)
- Greek yogurt(200 g)
- Lemon(1)
- Tahini(1 tbsp)
- Fresh mint(15 g)
- Flat Leaf Parsley(15 g)

Finely chop {Onion}, mince {Garlic}, roughly chop {Fresh mint} and {Fresh parsley}, and cut {Lemon} into halves.

In a bowl, mix {Greek yogurt}, {Tahini}, a squeeze from half the {Lemon}, a pinch of the {Salt}, and a little {Black pepper} until smooth. Set aside.

Heat {Olive oil} in a large frying pan over medium-high heat. Add {Onion} and cook until softened and lightly golden, about 5 minutes. Stir in {Garlic}, {Cumin}, {Paprika}, and {Cinnamon} for 1 minute.

Add {Lamb Mince}, {Salt}, and the remaining {Black pepper}. Break the lamb into small irregular pieces and cook until browned and cooked through, about 8 minutes.

Add {Spinach} by handfuls and toss until wilted into the lamb, about 2 minutes. Squeeze in the remaining half of the {Lemon} and toss again.

Warm the {Flatbread} in a dry pan or low oven for 2 minutes, then spread with the yogurt sauce and pile on the lamb mixture. Finish with {Fresh mint} and {Fresh parsley}, then fold and serve.
