  • Ground lamb(600 g)
  • Onion(1)
  • Garlic(3 cloves)
  • Flat Leaf Parsley(15 g)
  • Cumin(2 tsp)
  • Paprika(2 tsp)
  • Cinnamon(½ tsp)
  • Salt(1½ tsp)
  • Black pepper(½ tsp)
  • Olive oil(2 tbsp)
  • Flatbread(4)
  • Greek yogurt(200 g)
  • Lemon()
  • Fresh mint(10 g)
  • Cucumber(1)
  • Tomato(2)
  • Red Onion(1)

Method

    Finely grate {Onion}, mince {Garlic}, and chop {Fresh parsley}. In a bowl, mix {Ground lamb} with half the onion, half the garlic, the parsley, {Cumin}, {Paprika}, {Cinnamon}, {Salt}, and {Black pepper}. Shape into 12 short kofta logs, then chill while you prep the rest.

    Dice {Cucumber}, {Tomato}, and {Red Onion}. In one bowl, stir {Greek yogurt} with the remaining garlic, chopped {Fresh mint}, and zest and juice from {Lemon}. In another bowl, toss the cucumber, tomato, and red onion with {Olive oil}, juice from {Lemon}, and {Salt}.

    Heat {Olive oil} in a large frying pan over medium-high heat. Add the kofta and cook, turning every few minutes, until golden-brown and cooked through.

    Transfer the kofta to a board and rest briefly. Warm the {Flatbread} in the same pan for 1 minute per side, then slice the kofta into bite-size pieces.

    Fill each warm flatbread with lamb kofta pieces, cucumber tomato salad, and mint yogurt. Fold and serve straight away.
