- Ground lamb(500 g)
- Couscous(200 g)
- Hummus(240 g)
- Cucumber(1)
- Tomato(2)
- Red Onion(1)
- Flat Leaf Parsley(20 g)
- Fresh mint(15 g)
- Feta(80 g)
- Lemon(1)
- Olive oil(3 tbsp)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Cinnamon(½ tsp)
- Garlic(2 cloves)
- Salt(1½ tsp)
- Black pepper(¾ tsp)

Finely chop {Red Onion}, dice {Cucumber} and {Tomato}, mince {Garlic}, and roughly chop {Fresh parsley} and {Fresh mint}.

In a bowl, mix the diced {Cucumber}, {Tomato}, half the {Red Onion}, half the {Fresh parsley}, half the {Fresh mint}, {Olive oil}, juice of half the {Lemon}, {Salt}, and {Black pepper}. Set aside.

Put {Couscous} in a heatproof bowl with {Olive oil} and a pinch of {Salt}. Pour over 240ml boiling water, cover, and leave for 5 minutes.

Heat the remaining {Olive oil} in a large frying pan over medium-high heat. Add {Lamb Mince} and the remaining {Red Onion}. Cook, breaking the lamb into bite-size pieces, until lightly browned, 6 minutes.

Stir in {Garlic}, {Cumin}, {Paprika}, {Cinnamon}, the remaining {Salt}, and the remaining {Black pepper}. Cook until fragrant and the lamb is cooked through, 4 minutes. Fluff the couscous with a fork.
