  • Turkey breast(600 g)
  • Greek yogurt(180 g)
  • Tomato paste(2 tbsp)
  • Garlic(3 cloves)
  • Ginger(1 tbsp)
  • Garam Masala(2 tsp)
  • Paprika(2 tsp)
  • Turmeric(1 tsp)
  • Cumin(1 tsp)
  • Salt(2 tsp)
  • Black pepper(1 tsp)
  • Olive oil(2 tbsp)
  • Basmati Rice(250 g)
  • Onion(1)
  • Bell pepper(2)
  • Chicken Broth(500 ml)
  • Coriander(15 g)optional
  • Lemon(1)optional

Method

    Heat the oven to 220°C. Slice the {Turkey breast} into bite-size pieces. Finely grate or mince the {Garlic}, grate the {Ginger}, thinly slice the {Onion}, and cut the {Bell pepper} into strips. Roughly chop the {Fresh cilantro} if using.

    In a large baking dish, mix the {Greek yogurt}, {Tomato paste}, {Garlic}, {Ginger}, {Garam Masala}, {Paprika}, {Turmeric}, {Cumin}, {Salt}, {Black pepper}, and {Olive oil}. Add the {Turkey breast}, {Onion}, and {Bell pepper}, then toss until everything is well coated.

    Scatter the {Basmati Rice} around the tray and pour in the {Chicken Stock}. Stir the rice gently into the edges so it is mostly submerged, leaving the tikka-coated turkey and vegetables visible on top.

    Bake until the rice is tender and the turkey is cooked through, stirring once halfway so the rice cooks evenly and the top gets lightly golden in spots.

    Fluff the rice and toss everything together. Finish with the {Fresh cilantro} and squeeze over the {Lemon} if using, then serve straight from the tray.
