
Balsamic Salmon & Cherry Tomato Traybake
Roasted salmon fillets sit over burst cherry tomatoes, zucchini, and orzo with a glossy balsamic finish. Everything cooks together into a bright, juicy dinner with plenty of color and a little basil on top.

- Salmon(600 g)
- Cherry Tomatoes(400 g)
- Courgette(2)
- Orzo(180 g)
- Garlic(4 cloves)
- Fresh basil(15 g)
- Olive oil(3 tbsp)
- Balsamic Glaze(2 tbsp)
- Lemon(1)
- Vegetable Broth(450 ml)
- Parmesan(30 g)optional
- Dried Oregano(1 tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)

Preheat the oven to 220C. Halve {Cherry Tomatoes}, slice the {Zucchini} into half-moons, finely chop the {Garlic}, tear most of the {Fresh basil}, and cut the {Lemon} into wedges.

In a large baking dish, combine the {Orzo}, {Cherry Tomatoes}, {Zucchini}, chopped {Garlic}, {Vegetable Stock}, {Olive oil}, {Balsamic vinegar}, {Oregano}, {Salt}, and {Black pepper}. Stir well and spread into an even layer.

Nestle the {Salmon} fillets on top. Drizzle with a little of the pan liquid and roast for 18 minutes, until the salmon is just cooked and the orzo is tender.

Scatter over the torn {Fresh basil} and the {Parmesan}, if using. Return to the oven for 5 minutes so the top looks glossy and the tomatoes fully burst.

Squeeze over a little {Lemon} juice and serve straight from the baking dish with the remaining wedges alongside.
