  • Broccoli(300 g)
  • Halloumi(225 g)
  • Arugula(60 g)
  • Cherry Tomatoes(200 g)
  • Lemon(1)
  • Honey(1 tbsp)
  • Olive oil(2 tbsp)
  • Dijon Mustard(1 tsp)
  • Salt(½ tsp)
  • Black pepper(½ tsp)

Method

    Cut {Broccoli} into small florets. Slice {Halloumi}. Halve {Cherry Tomatoes}. Juice {Lemon} into a small bowl, then whisk with {Honey}, {Olive oil}, {Dijon Mustard}, half the {Salt}, and half the {Black pepper}.

    Heat a large frying pan over medium-high heat. Add half the dressing, then add {Broccoli} with the remaining {Salt} and remaining {Black pepper}. Cook until bright green and lightly golden at the edges, adding a splash of water if needed, for 5 minutes.

    Push the {Broccoli} to one side of the pan and add {Halloumi}. Cook, turning once, until both sides are golden, 3 minutes.

    Add {Cherry Tomatoes} to the pan for 1 minute just to soften slightly, then tip everything into a bowl with {Arugula}. Pour over the remaining dressing and toss until the greens are lightly coated and the warm vegetables are evenly mixed through.

    Serve straight away while the {Halloumi} is still warm and the {Broccoli} is lightly charred.
