
Halloumi Courgette Fritters & Salad
Golden halloumi and courgette fritters with crisp edges, served with a lemony yogurt and a fresh tomato-cucumber salad. Salty, herby, and bright enough for a fast Mediterranean dinner.

- Halloumi(250 g)
- Zucchini(2)
- Eggs(2)
- Flour(4 tbsp)
- Fresh parsley(2 tbsp)
- Garlic(1 clove)
- Lemon(1)
- Olive oil(4 tbsp)
- Greek yogurt(200 g)
- Tomato(2)
- Cucumber(1)
- Red Onion(1)
- Lettuce(150 g)
- Oregano(1 tsp)
- Salt(1 tsp)
- Black pepper(1 tsp)

Coarsely grate {Halloumi} and {Courgette}. Squeeze the courgette well in a clean towel to remove excess moisture. Finely chop the {Fresh parsley} and grate the {Garlic}.

In a bowl, mix the grated {Halloumi}, squeezed {Courgette}, {Eggs}, {Flour}, chopped {Fresh parsley}, grated {Garlic}, half the {Salt}, and half the {Black pepper} into a thick fritter mixture. In a second bowl, stir the {Greek yogurt} with a squeeze of {Lemon}, a pinch of the remaining {Salt}, and a little of the remaining {Black pepper}.

Chop the {Tomato}, {Cucumber}, and {Red Onion}, then toss with the {Lettuce}, {Dried Oregano}, {Olive oil}, and another squeeze of {Lemon} to make a fresh salad.

Heat half the remaining {Olive oil} in a large frying pan over medium heat. Drop in heaped spoonfuls of the fritter mixture and flatten slightly. Cook for 3–4 minutes on each side until golden and crisp-textured, adding the rest of the {Olive oil} as needed.

Serve the fritters straight away with the lemony yogurt alongside and the salad piled next to them. Finish with any remaining {Fresh parsley} and lemon wedges from the {Lemon} if you like.
