  • Burger Buns(4)
  • Cabbage(250 g)
  • Carrot(1)
  • Greek yogurt(120 g)
  • Mayonnaise(2 tbsp)
  • Lemon(1)
  • Flat Leaf Parsley(15 g)
  • Olive oil(1 tbsp)
  • Tomato(2)
  • Lettuce(120 g)
  • Honey(1 tsp)
  • Dijon Mustard(1 tsp)
  • Black pepper(1 tsp)

Method

    Finely shred {Cabbage}, grate {Carrot}, chop {Fresh parsley}, slice {Tomato}, and separate the {Lettuce} leaves. Cut the {Halloumi} into 4 thick slabs. Zest and juice {Lemon}.

    In a bowl, mix the shredded {Cabbage}, grated {Carrot}, half the lemon juice from {Lemon}, {Honey}, {Dijon Mustard}, and a pinch of {Black pepper} until lightly coated and crisp.

    Stir the {Greek yogurt}, {Mayonnaise}, chopped {Fresh parsley}, lemon zest from {Lemon}, and the remaining lemon juice from {Lemon} into a creamy spread.

    Heat {Olive oil} in a large frying pan over medium heat. Cook the {Halloumi} slabs for 2–3 minutes per side until golden and crisp at the edges. Split and toast the {Burger Buns} cut-side down for the last 1–2 minutes.

    Spread the buns with the yogurt sauce, then build each burger with {Lettuce}, a warm slab of {Halloumi}, {Tomato}, and a pile of slaw. Serve straight away with any extra slaw on the side.
