- Halloumi(400 g)
- Lettuce(1)
- Cucumber(1)
- Cherry Tomatoes(250 g)
- Red Onion(1)
- Black Olives(80 g)
- Flat Leaf Parsley(15 g)
- Fresh mint(10 g)optional

- Olive oil(3 tbsp)
- Honey(1 tbsp)
- Dijon Mustard(1 tsp)
- Salt(½ tsp)
- Black pepper(½ tsp)

Slice the {Halloumi} into 8 thick slabs. Tear the {Lettuce} into bite-size pieces, slice the {Cucumber}, halve the {Cherry Tomatoes}, and thinly slice the {Red Onion}. Roughly chop the {Fresh parsley} and {Fresh mint}.

Juice the {Lemon} into a large bowl, then whisk in the {Olive oil}, {Honey}, {Dijon Mustard}, {Salt}, and {Black pepper} until glossy and combined.

Add the {Lettuce}, {Cucumber}, {Cherry Tomatoes}, {Red Onion}, {Kalamata Olives}, {Fresh parsley}, and {Fresh mint} to the bowl and toss until everything is lightly coated.

Heat a nonstick pan over medium-high heat. Add the {Halloumi} and cook for 2–3 minutes per side until golden and crisp-edged.
