- Halloumi(450 g)
- Flatbread(4)
- Greek yogurt(180 g)
- Lemon(1)
- Flat Leaf Parsley(15 g)
- Olive oil(3 tbsp)
- Salt(¾ tsp)
- Black pepper(½ tsp)
- Cucumber(1)
- Tomato(2)
- Red Onion(1)
- Arugula(60 g)
- Vinegar(1 tbsp)
- Hot Honey(4 tbsp)

Slice the {Halloumi} into 8 thick pieces. Finely chop the {Fresh parsley}, juice half the {Lemon}, dice the {Cucumber} and {Tomato}, and thinly slice the {Red Onion}.

In a bowl, stir together the {Greek yogurt}, chopped {Fresh parsley}, lemon juice from half the {Lemon}, {Olive oil}, {Salt}, and {Black pepper} until smooth. In a second bowl, toss the {Cucumber}, {Tomato}, {Red Onion}, and {Arugula} with the {Vinegar}, remaining salad {Olive oil}, {Salt}, and {Black pepper}.

Heat the remaining {Olive oil} in a large frying pan over medium-high heat. Cook the {Halloumi} for 2–3 minutes per side until golden. Warm the {Flatbread} in the same pan for about 30 seconds per side.

Spread the herby yogurt over each {Flatbread}. Pile on the salad, top with 2 pieces of {Halloumi} per flatbread, and drizzle over the {Hot Honey}. Finish with wedges from the remaining half of the {Lemon} and serve right away.
