- Gnocchi(500 g)
- Italian Sausage(400 g)
- Bell pepper(2)
- Red Onion(1)
- Cherry Tomatoes(250 g)
- Garlic(3 cloves)
- Olive oil(2 tbsp)
- Tomato paste(1 tbsp)
- Dried Oregano(1 tsp)
- Chili flakes(½ tsp)optional
- Salt(¾ tsp)
- Black pepper(½ tsp)
- Parmesan(40 g)
- Fresh basil(10 g)optional

Heat the oven to 220°C. Slice the {Red Onion} into wedges, cut the {Bell pepper} into thick strips, halve the {Cherry Tomatoes}, and finely chop the {Garlic}. Squeeze the {Pork sausage} out of their casings into rough bite-size pieces.

Tip the {Gnocchi}, {Pork sausage}, {Bell pepper}, {Red Onion}, {Cherry Tomatoes}, and {Garlic} onto a large tray. Add the {Olive oil}, {Tomato paste}, {Oregano}, {Chili flakes}, {Salt}, and {Black pepper}, then toss really well so everything is evenly coated.

Roast for 20 minutes, stirring once halfway, until the {Pork sausage} is cooked through, the {Gnocchi} is golden and crisp at the edges, and the tomatoes have softened into a light sauce.

Scatter over the {Parmesan} and return the tray to the oven for 8 minutes, until the cheese is melted in spots and the top looks extra toasty.
