
Lamb Kofta & Mint Yoghurt

Ingredients
- Ground lamb(600 g)
- Onion(1)
- Garlic(3 cloves)
- Fresh mint(4 tbsp)
- Coriander(2 tbsp)
- Cumin(2 tsp)
- Ground Coriander(2 tsp)
- Garam Masala(1 tsp)
- Paprika(1 tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Olive oil(2 tbsp)
- Couscous(200 g)
- Stock cube(1)
- Butter(20 g)
- Greek yogurt(200 g)
- Lemon(1)
- Cucumber(1)
- Tomato(2)
- Red Onion(1)

Grate {Onion}, mince {Garlic}, and finely chop the {Fresh mint} and {Fresh cilantro} for the kofta. Cut the {Lemon} in half. Dice the {Cucumber}, {Tomato}, and {Red Onion} for the salad.

In a bowl, mix {Ground lamb} with half the grated {Onion}, half the {Garlic}, the kofta {Fresh mint}, the {Fresh cilantro}, {Cumin}, {Ground Coriander}, {Garam Masala}, {Paprika}, {Salt}, and {Black pepper}. Shape onto 8 skewers in long sausage shapes, pressing firmly so the mixture holds.

Stir the {Greek yogurt} with the remaining {Fresh mint}, remaining {Garlic}, and juice from half the {Lemon}. In another bowl, toss the {Cucumber}, {Tomato}, and {Red Onion} with juice from the remaining half of the {Lemon} and a pinch of salt.

Put the {Couscous} in a heatproof bowl with the crumbled {Stock cube} and {Butter}. Pour in 250ml water, cover, and leave for 5 minutes. Fluff with a fork.

Heat {Olive oil} in a large pan over medium-high heat. Cook the kofta skewers for 10 to 12 minutes, turning every few minutes, until browned all over and cooked through.

Serve the couscous on plates, top with the lamb kofta skewers, and add spoonfuls of mint yogurt and cucumber salad alongside.
