
Mozzarella Nduja Toastie
Golden toasted sandwiches packed with melty mozzarella and spicy nduja, served with a simple peppery arugula salad to turn it into a fast, proper dinner.

- Sourdough(4 slices)
- Nduja(80 g)
- Mozzarella(200 g)
- Butter(1 tbsp)
- Arugula(60 g)
- Olive oil(1 tbsp)
- Lemon(1)
- Salt(¼ tsp)
- Black pepper(¼ tsp)

Thinly slice the {Mozzarella}. Halve the {Lemon}.

Spread the {Nduja} over 2 slices of {Sourdough}, then pile on the {Mozzarella} and close with the remaining {Sourdough}. Spread the outside of each sandwich with the {Butter}.

Set the sandwiches in a dry frying pan over medium heat and cook for 3 minutes per side, pressing lightly, until the bread is golden and the cheese is melted.

Toss the {Arugula} with the juice of half the {Lemon}, {Olive oil}, {Salt}, and {Black pepper}.

Slice the toasties in half and serve with the dressed arugula and the remaining {Lemon} on the side.
