
Spiced Beef Kofta & Couscous
Tender beef kofta simmered in a warmly spiced tomato sauce and folded through fluffy couscous with herbs and feta for a hearty, family-style Mediterranean dinner.

Ingredients
- Beef Mince(600 g)
- Onion(1)
- Garlic(3 cloves)
- Flat Leaf Parsley(20 g)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Dried Oregano(1 tsp)
- Salt(2 tsp)
- Black pepper(1 tsp)
- Olive oil(2 tbsp)
- Tomato paste(2 tbsp)
- Canned tomatoes(400 g)
- Beef Broth(250 ml)
- Couscous(200 g)
- Spinach(100 g)
- Feta(100 g)
- Lemon(1)

Finely grate half of {Onion}, mince {Garlic}, and finely chop {Fresh parsley}. In a bowl, mix {Ground beef}, the grated onion, half the garlic, most of the parsley, {Cumin}, {Paprika}, {Oregano}, {Salt}, and {Black pepper}. Shape into 16 small kofta meatballs.

Heat {Olive oil} in a large deep skillet over medium heat. Add the kofta and cook until lightly browned all over, 6 minutes. Lift them to a plate. Finely chop the remaining half of {Onion}.

Add the chopped onion to the skillet and cook for 3 minutes until softened. Stir in the remaining {Garlic} and {Tomato paste} for 1 minute. Add {Canned tomatoes} and {Beef Stock}, then return the kofta to the pan.

Cover and simmer for 12 minutes until the kofta are cooked through and the sauce has thickened. Stir in {Spinach} until wilted, then scatter in {Couscous}. Add 220ml water, cover again, and leave off the heat for 5 minutes until the couscous is tender.

Fluff the couscous gently through the sauce so the kofta are folded into the dish. Crumble over {Feta}, finish with the remaining parsley, and serve with wedges of {Lemon}.
