  • Spinach(200 g)
  • Feta(150 g)
  • Onion(1)
  • Olive oil(2½ tbsp)
  • Salt(½ tsp)
  • Black pepper(½ tsp)
  • Lettuce(1)
  • Lemon(1)

Method

    Heat the oven to 200°C. Thinly slice {Onion}, roughly chop {Spinach}, crumble {Feta}, and whisk {Eggs} with {Salt} and {Black pepper} in a large bowl.

    Warm {Olive oil} in an ovenproof skillet over medium heat. Cook {Onion} for 4 minutes until softened, then add {Spinach} and stir for 2 minutes until wilted.

    Pour in the egg mixture and scatter over {Feta}. Cook for 2 minutes until the edges begin to set.

    Transfer the skillet to the oven and bake for 10 minutes, until the center is just set and lightly golden on top.
