- Cauliflower(1)
- Onion(1)
- Butter(3 tbsp)
- All-Purpose Flour(3 tbsp)
- Milk(500 ml)
- Cheddar cheese(200 g)
- Parmesan(40 g)
- Dijon Mustard(1 tsp)
- Nutmeg(¼ tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Breadcrumbs(50 g)
- Olive oil(1 tbsp)

Heat the oven to 220°C. Cut {Cauliflower} into bite-size florets and finely slice {Onion}. Grate {Cheddar cheese} and {Parmesan}.

Bring a large pan of water to the boil. Add the cauliflower florets and cook for 5 minutes until just tender, then drain well.

Meanwhile, melt {Butter} in a saucepan over medium heat. Add {Onion} with half the {Salt} and cook for 5 minutes until softened. Stir in {Flour} and cook for 1 minute, then gradually whisk in {Milk}. Add {Dijon Mustard}, {Nutmeg}, remaining {Salt}, and {Black pepper}. Simmer for 3 minutes until thickened, then stir in most of the {Cheddar cheese} and half the {Parmesan} until smooth.

Fold the drained cauliflower into the cheese sauce, then tip into a baking dish. Mix {Breadcrumbs}, remaining {Parmesan}, and {Olive oil}, then scatter over the top.
