
Cheese Onion Quiche & Salad
Buttery pastry filled with sweet softened onions, eggs, cream, and plenty of cheddar, baked until golden and just set. Served with a simple lemony green salad to keep the plate balanced and dinner-ready.

- Shortcrust Pastry(320 g)
- Eggs(4)
- Onion(2)
- Butter(1 tbsp)
- Cheddar cheese(180 g)
- Cream(200 ml)
- Dijon Mustard(1 tsp)
- Nutmeg(¼ tsp)
- Salt(1¼ tsp)
- Black pepper(¾ tsp)
- Lettuce(1)
- Olive oil(1 tbsp)
- Lemon(1)

Preheat the oven to 200°C. Peel and thinly slice {Onion}. Unroll or press {Shortcrust Pastry} into a 23cm tart tin or pie dish, pushing it into the corners.

Melt {Butter} in a pan over medium heat. Add {Onion} with {Salt} and cook, stirring often, until soft and lightly golden. Let them cool for a minute.

Whisk together {Eggs}, {Cream}, {Dijon Mustard}, {Nutmeg}, and {Black pepper}. Stir in the softened {Onion} and most of the {Cheddar cheese}, saving a small handful for the top.

Pour the filling into the pastry case and scatter over the remaining {Cheddar cheese}. Bake until the filling is puffed, golden, and just set in the center.

While the quiche bakes, tear the {Lettuce}. Whisk the juice of {Lemon} with {Olive oil}, {Salt}, and {Black pepper}, then toss with the lettuce.
