- Eggs(4)
- Avocado(1)
- Sourdough(4 slices)
- Chili Crisp(2 tbsp)
- Arugula(60 g)
- Lemon(1)
- Olive oil(2 tbsp)
- Salt(½ tsp)
- Black pepper(¼ tsp)

Halve and scoop out {Avocado}. Mash with a pinch of {Salt}, a few grinds of {Black pepper}, and a squeeze of lemon from {Lemon}. Put {Rocket} in a bowl and dress with the remaining lemon juice and {Olive oil}.

Toast {Sourdough} until golden and crisp at the edges. Spread the avocado over each slice.

Heat a little of the dressed oil from the salad or a slick from {Olive oil} in a frying pan. Crack in {Eggs} and fry until the whites are set and the yolks stay jammy, 3 to 4 minutes.

Top each toast with 2 fried eggs and spoon over {Chilli Crisp}. Serve with the dressed rocket alongside.
