
Cod & Parsley Sauce

Ingredients
- Cod(600 g)
- Potato(800 g)
- Flat Leaf Parsley(30 g)
- Garlic(2 cloves)
- Lemon(1)
- Butter(40 g)
- Olive oil(2 tbsp)
- All-Purpose Flour(1 tbsp)
- Milk(180 ml)
- Salt(1 tsp)
- Black pepper(½ tsp)

Peel and cut {Potato} into small chunks. Finely chop {Fresh parsley}, mince {Garlic}, and zest and juice {Lemon}. Pat the {Cod} dry and season with half the {Salt} and half the {Black pepper}.

Put the {Potato} in a pan of salted water. Bring to a boil and cook until tender, 12 minutes.

Meanwhile, heat {Olive oil} in a large frying pan over medium-high heat. Add the {Cod} and cook for 3 minutes on the first side, then turn and cook for 2 more minutes until the fish is opaque and flakes easily.

Transfer the {Cod} to a plate. In the same pan, melt the {Butter}, then stir in the {Garlic} and {Flour} for 30 seconds. Gradually whisk in the {Milk}, then add the {Fresh parsley}, {Lemon} zest, 1 tbsp of {Lemon} juice, the remaining {Salt}, and the remaining {Black pepper}. Simmer for 2 minutes until lightly thickened.

Drain the {Potato} and lightly crush with a fork. Divide the potatoes between plates, set the {Cod} on top, and spoon over the parsley sauce to serve.
