
Greek Cod & Potato Traybake

- Cod(600 g)
- Potato(800 g)
- Cherry Tomatoes(250 g)
- Red Onion(1)
- Black Olives(120 g)
- Feta(120 g)
- Lemon(1)
- Garlic(3 cloves)
- Olive oil(3 tbsp)
- Dried Oregano(2 tsp)
- Paprika(1 tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Flat Leaf Parsley(15 g)

Preheat the oven to 220°C. Cut the {Potato} into bite-size wedges, thinly slice the {Red Onion}, halve the {Cherry Tomatoes}, finely chop the {Garlic}, and roughly chop the {Fresh parsley}.

On a large tray, toss the {Potato}, {Red Onion}, {Garlic}, {Olive oil}, {Dried Oregano}, {Paprika}, {Salt}, and {Black pepper} with the zest and half the juice from the {Lemon}. Spread into an even layer and roast for 20 minutes.

Stir the {Cherry Tomatoes} and {Kalamata Olives} into the tray. Nestle the {Cod} on top, then crumble over the {Feta}. Drizzle with the remaining juice from the {Lemon}.

Return the tray to the oven and bake for 10 minutes, or until the {Cod} is opaque and flakes easily.

Scatter over the {Fresh parsley} and serve straight from the tray, spooning the roasted potatoes, tomatoes, olives, and feta alongside each piece of {Cod}.
