
Halloumi Roasted Veg Wraps
Warm tortillas packed with golden halloumi, sweet roasted peppers and zucchini, crisp lettuce, and a quick lemony yogurt sauce. Bright, salty, and satisfying, with plenty of color and texture in every bite.

Ingredients
- Halloumi(250 g)
- Bell pepper(2)
- Courgette(1)
- Red Onion(1)
- Olive oil(3 tbsp)
- Dried Oregano(1 tsp)
- Paprika(1 tsp)
- Salt(1 tsp)
- Black pepper(½ tsp)
- Greek yogurt(180 g)
- Lemon(1)
- Garlic(1 clove)
- Lettuce(120 g)
- Tortilla(4)
Method

Heat the oven to 220C. Slice {Bell pepper}, {Zucchini}, and {Red Onion} into strips. Cut the {Halloumi} into bite-size pieces. In a bowl, toss the vegetables with {Olive oil}, {Dried Oregano}, {Paprika}, half the {Salt}, and half the {Black pepper}.

Spread the seasoned vegetables on a tray and roast for 10 minutes. Add the {Halloumi} to the tray, toss everything together, and roast for 10 minutes more until the vegetables are tender and the halloumi is golden at the edges.

While the tray is in the oven, mix the {Greek yogurt} with the juice of {Lemon}, grated {Garlic}, remaining {Salt}, and remaining {Black pepper}. Shred the {Lettuce}.

Warm the {Tortilla} for 1 to 2 minutes in the oven or a dry pan just until soft and flexible.

Fill each {Tortilla} with {Lettuce}, the roasted vegetables and halloumi mixture, and spoon over the yogurt sauce. Fold and serve right away.
