- Steamed Rice(250 g)
- Black Beans(2)
- Mango(1)
- Corn(200 g)
- Avocado(1)
- Lettuce(150 g)
- Red Onion(1)
- Garlic(2 cloves)
- Lime(2)
- Coriander(15 g)optional
- Olive oil(2 tbsp)
- Cumin(2 tsp)
- Smoked paprika(2 tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)

Add the rinsed {White rice} to a saucepan with 500ml water and {Salt}. Bring to a boil, cover, and cook until tender.

Meanwhile, dice the {Mango}, slice the {Red Onion}, shred the {Lettuce}, mince the {Garlic}, chop the {Fresh cilantro}, and cut the {Avocado}. Drain and rinse the {Black Beans}.

Heat {Olive oil} in a large pan. Add half the {Red Onion}, the {Garlic}, {Cumin}, and {Smoked paprika}. Cook briefly, then add the {Black Beans} and {Corn}. Toss until hot and lightly coated in the spices.

Fluff the rice and squeeze in the juice of {Lime}. Season with {Black pepper}. Divide the rice between bowls, then add the bean mixture, {Lettuce}, remaining {Red Onion}, {Mango}, and {Avocado}. Finish with {Fresh cilantro}.
