- Beef Sirloin(700 g)
- Peanut butter(2 tbsp)
- Paprika(2 tsp)
- Cayenne Pepper(1 tsp)
- Ground Coriander(1 tsp)
- Garlic powder(1 tsp)
- Onion powder(1 tsp)
- Brown sugar(1 tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Olive oil(2 tbsp)
- Couscous(240 g)
- Vegetable Broth(300 ml)
- Tomato(2)
- Cucumber(1)
- Red Onion(1)
- Lemon(1)
- Coriander(15 g)
- Greek yogurt(160 g)

Slice {Beef steak} into thick strips suitable for threading onto skewers. In a bowl, mix {Peanut butter}, {Paprika}, {Cayenne Pepper}, {Ground Coriander}, {Garlic powder}, {Onion powder}, {Brown sugar}, {Salt}, {Black pepper}, and {Olive oil} into a loose paste. Rub all over the beef and set aside while you prep the rest.

Dice {Tomato}, {Cucumber}, and {Red Onion}. Chop {Fresh cilantro} and toss with the vegetables, juice from half of {Lemon}, and a pinch of salt. In a separate small bowl, stir {Greek yogurt} with the juice from the remaining half of {Lemon}.

Put {Couscous} in a heatproof bowl. Bring {Vegetable Stock} to a boil with 60ml water, pour over the couscous, cover, and leave for 5 minutes.

Thread the beef onto skewers in loose folds. Cook under a hot grill or in a grill pan for 8 to 10 minutes, turning a few times, until the edges are golden and the beef is cooked to your liking. Fluff the couscous with a fork.

Pile the couscous onto plates, spoon over the tomato-cucumber salad, and lay the skewers on top. Finish with the lemon yogurt alongside.
