  • Beef Mince(500 g)
  • Black Beans(1)
  • Tortilla(8)
  • Cheddar cheese(200 g)
  • Onion(1)
  • Garlic(2 cloves)
  • Jalapeno(1)optional
  • Avocado(1)
  • Salsa(6 tbsp)
  • Sour cream(120 ml)
  • Olive oil(1 tbsp)
  • Tomato paste(1 tbsp)
  • Cumin(1 tsp)
  • Smoked paprika(1 tsp)
  • Dried Oregano(1 tsp)
  • Salt(1 tsp)
  • Black pepper(½ tsp)
  • Coriander(2 tbsp)optional
  • Lime(1)

Method

    Heat the oven to 220°C. Dice the {Onion}, mince the {Garlic}, finely slice the {Jalapeno}, chop the {Fresh cilantro}, cut the {Avocado} into chunks, and cut the {Lime} into wedges. Drain and rinse the {Black Beans}. Cut the {Tortilla} into triangles.

    Heat {Olive oil} in a large frying pan over medium-high heat. Add the {Onion} and cook for 2 minutes, then add the {Ground beef}, {Garlic}, {Cumin}, {Smoked paprika}, {Oregano}, {Salt} and {Black pepper}. Cook, breaking the beef into small pieces, until browned. Stir in the {Tomato paste}, {Salsa} and {Black Beans} and cook until thickened slightly.

    Spread the {Tortilla} triangles over a large tray or baking sheet. Spoon over the beef and bean mixture, then scatter with the {Cheddar cheese}.

    Bake for 7 minutes, until the {Cheddar cheese} is melted and the tortilla edges are crisp and golden.

    Finish with dollops of {Sour cream}, the {Avocado}, {Jalapeno}, {Fresh cilantro} and a squeeze of {Lime}. Serve straight from the tray.
