  • Beef Mince(500 g)
  • Onion(1)
  • Garlic(2 cloves)
  • Olive oil(1 tbsp)
  • Paprika(1 tsp)
  • Cumin(1 tsp)
  • Dried Oregano(½ tsp)
  • Salt(1 tsp)
  • Black pepper(½ tsp)
  • Tomato paste(1 tbsp)
  • Tortilla(8)
  • Cheddar cheese(250 g)
  • Salsa(8 tbsp)
  • Sour cream(120 ml)
  • Coriander(2 tbsp)optional

Method

    Peel and finely chop {Onion} and mince {Garlic}. Grate the {Cheddar cheese} and roughly chop the {Fresh cilantro} if using.

    Heat {Olive oil} in a large frying pan over medium-high heat. Add {Onion} and cook for 3 minutes until softened, then add {Garlic}, {Paprika}, {Cumin}, and {Oregano} and stir for 1 minute.

    Add {Ground beef}, {Salt}, and {Black pepper}. Break the beef up with a spoon and cook for 5 minutes until browned. Stir in {Tomato paste} and cook for 1 more minute until the beef looks glossy and well coated.

    Lay out {Tortilla}. Spread the beef mixture over one half of each tortilla, then top with {Cheddar cheese}. Fold each tortilla over to make half-moons.

    Wipe out the pan if needed and cook the quesadillas in batches over medium heat for 2 minutes per side until the tortillas are golden and the cheese has melted.

    Cut the quesadillas into wedges and serve with {Salsa}, {Sour cream}, and a scatter of {Fresh cilantro}.
