
Chicken Caesar Chopped Salad
Golden chicken, crisp chopped lettuce, crunchy croutons, and plenty of Parmesan get tossed in a punchy homemade Caesar dressing for a fast, filling dinner salad that actually eats like a meal.

- Chicken breast(500 g)
- Lettuce(2)
- Parmesan(60 g)
- Croutons(120 g)
- Mayonnaise(4 tbsp)
- Greek yogurt(3 tbsp)
- Anchovies(4)
- Garlic(1 clove)
- Lemon(1)
- Dijon Mustard(1 tbsp)
- Olive oil(2 tbsp)
- Salt(1 tsp)
- Black pepper(1 tsp)

Slice {Chicken breast} into bite-size pieces. Season with {Salt} and {Black pepper}. Chop the {Lettuce}, finely grate the {Parmesan}, mince the {Garlic}, and finely chop the {Anchovy Fillets}.

In a large bowl, whisk {Mayonnaise}, {Greek yogurt}, chopped {Anchovy Fillets}, minced {Garlic}, {Dijon Mustard}, the juice of {Lemon}, and half the {Parmesan} until smooth.

Heat {Olive oil} in a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through, 6 to 8 minutes, stirring a couple of times.

Let the chicken sit for 2 minutes so the juices settle slightly and it stays tender in the salad.

Add the chopped {Lettuce}, {Croutons}, cooked chicken, and most of the remaining {Parmesan} to the bowl. Toss until everything is evenly coated with dressing.
