- Chicken breast(600 g)
- Couscous(240 g)
- Bell pepper(2)
- Onion(1)
- Spinach(120 g)
- Garlic(3 cloves)
- Flat Leaf Parsley(15 g)
- Lemon(1)
- Olive oil(3 tbsp)
- Cumin(2 tsp)
- Paprika(2 tsp)
- Turmeric(1 tsp)
- Cinnamon(½ tsp)
- Salt(1½ tsp)
- Black pepper(½ tsp)
- Chicken Broth(300 ml)

Slice the {Chicken breast} into bite-size strips. Thinly slice the {Onion} and {Bell pepper}, mince the {Garlic}, chop the {Fresh parsley}, and zest then juice the {Lemon}.

In a large skillet, heat {Olive oil} over medium-high heat. Add the {Chicken breast}, {Cumin}, {Paprika}, {Turmeric}, {Cinnamon}, {Salt}, and {Black pepper}. Cook, stirring often, until the chicken is lightly golden and nearly cooked through, 6 minutes.

Add the {Onion}, {Bell pepper}, and {Garlic} to the skillet with the remaining {Olive oil}. Cook until the vegetables soften and the chicken is cooked through, 5 minutes.

Meanwhile, put the {Couscous} in a heatproof bowl with the {Chicken Stock}, half the {Lemon} juice, and the remaining {Salt}. Cover and leave for 5 minutes, then fluff with a fork.

Add the {Spinach} to the skillet and toss for 1 minute to wilt. Add the fluffed {Couscous}, {Fresh parsley}, {Lemon} zest, and the remaining {Lemon} juice, then toss everything together until evenly mixed and glossy. Serve straight away.
