  • Beef Sirloin(500 g)
  • Udon Noodles(600 g)
  • Mushroom(250 g)
  • Bok Choy(2)
  • Onion(1)
  • Garlic(3 cloves)
  • Ginger(1 tbsp)
  • Soy sauce(4 tbsp)
  • Oyster Sauce(3 tbsp)
  • Mirin(2 tbsp)
  • Sesame oil(1 tbsp)
  • Cornflour(2 tsp)
  • Rapeseed Oil(2 tbsp)
  • Green Onions(4)
  • Sesame seeds(2 tsp)optional
  • Black pepper(½ tsp)

Method

    Thinly slice the {Beef steak}. Slice the {Mushroom}, trim and chop the {Bok Choy}, thinly slice the {Onion}, mince the {Garlic}, grate the {Ginger}, and slice the {Scallions}.

    Cook the {Udon Noodles} in boiling water according to pack directions until just tender, about 2 minutes. Drain, rinse briefly, and loosen the noodles.

    Whisk together the {Soy sauce}, {Oyster Sauce}, {Mirin}, {Sesame oil}, {Cornstarch}, {Garlic}, {Ginger}, and {Black pepper} until smooth.

    Heat {Vegetable oil} in a large wok or frying pan over high heat. Stir-fry the {Beef steak} for 2–3 minutes until lightly seared at the edges but still tender. Transfer to a plate.

    Add the {Onion}, {Mushroom}, and {Bok Choy} to the pan and stir-fry for 3 minutes until softened and glossy. Return the beef, add the noodles and sauce, then toss for 2 minutes until the sauce thickens and coats everything evenly.

    Divide into bowls and top with the {Scallions} and {Sesame seeds} if using.
