
Prawn Fried Rice

- Jasmine Rice(300 g)
- King Prawns(400 g)
- Eggs(3)
- Peas(120 g)
- Onion(1)
- Garlic(3 cloves)
- Green Onions(4)
- Soy sauce(3 tbsp)
- Oyster Sauce(1½ tbsp)
- Sesame oil(1 tbsp)
- White Pepper(½ tsp)
- Rapeseed Oil(2 tbsp)
- Salt(½ tsp)

Cook {Jasmine Rice} in plenty of water until just tender, about 10 minutes. Drain well, spread it out on a tray or large plate, and let the steam escape while you prep the rest.

Meanwhile, peel and pat dry {Prawns}. Crack {Eggs} into a bowl and beat with {Salt}. Finely chop {Onion}, mince {Garlic}, and slice {Spring Onion}, keeping the green tops separate. Stir together {Soy sauce}, {Oyster Sauce}, {Sesame oil}, and {White Pepper}.

Heat a wok or large frying pan with {Vegetable oil} over high heat. Add the beaten {Eggs} and scramble for 1 minute until softly set, then scoop out to a plate.

Add {Onion} and {Garlic} to the pan and stir-fry for 2 minutes. Add {Prawns} and cook for 2 minutes until pink and curled. Stir in {Peas} and the white parts of {Spring Onion}.

Add the cooked {Jasmine Rice} and break up any clumps. Pour in the {Soy sauce} mixture, return the scrambled {Eggs} to the pan, and toss everything for 3 minutes until the rice is hot, glossy, and evenly coated. Finish with the green tops of {Spring Onion}.
